We believe in focusing on the key aspects of the brewing process that most affect quality and stability. We believe in big bold flavors. When we say something has a unique ingredient in it, you can bet you will taste it. We are growing our barrel aging program as fast as possible and exploring new tecniques with wood fermentation, wild ales and exotic ingredients. We regularly host live music and food trucks on Thursdays, Fridays and Saturdays.

Dominatrix
Triple IPA
11.0% ABV.

This huge Triple IPA is finely balanced with caramel 60 and wheat malt. Then massive amounts of Centennial, Cascade and Citra hops produce a citrusy hop juice character.

Russian Imperial Stout
11 % ABV.

This huge Russian Imperial stout is as complex as they come. Big hop flavor and aroma that fades to clean malt with notes of chocolate, coffee, and roasty goodness.

Prairie Madness

7.0% ABV.

2017 G.A.B.F. Gold Medal Winner for American IPA
Brewed with American, German and English malts, duly hopped with Mosaic and Simcoe Hops. This India Pale Ale is our Midwest take on a classic American craft style. Great malt character and hop aroma with a smooth, citrusy flavor, followed by a crisp, clean finish make this a distinctive beer.

South Side Irish Red
Irish Red
5.6% ABV.

This malty Irish style red ale was inspired by the famous red ales from Ireland. It starts with smooth English specialty malts and finishes with a nice continental hop finish to cut the malt and balance this beer out.

Crash Test Dummy
Belgian Style Tripel
9.0% ABV.

Belgian Style Tripel with aromas of spice, pepper and clove phenolics from the Belgian yeast. Just enough hop presence to balance the big malt bill.

Big Beautiful Wheat
Bavarian Style Hefeweizen
5.2% ABV.

A smooth and crisp wheat ale with subtle notes of banana, clove, coriander, and orange.

Alabama Hot Tub
American Wheat Ale
5.5% ABV.

Alabama Hot Tub is a Hoppy American Wheat Ale. It is brewed and dry hopped with Amarillo and Simcoe Hops.

Howdy Neighbor
Kolsch

It is time for our favorite collaboration with our neighbors 350 Brewing Co. Howdy Neighbor is a strawberry lemon kolsh and is a wonderfully refreshing beer. It has a huge strawberry taste with a little lemon zing. Howdy Neighbor is a great session beer for the summer and should be enjoyed with your neighbors.

Banaba
West Coast Double IPA
8.0% ABV.

Banaba is a West Coast Style Double IPA. This Double IPA is going to be dry and very hop forward. Hops use are Columbus, Centennial, and Simcoe.

New England Pale Ale

Collaboration With The Open Bottle

Jump into summer with this crushable New England style pale ale brewed with tropically explosive Vic Secret and Citra hops, lactose, vanilla, and pineapple!

Honey Seeker
American Barleywine
10% ABV.

Honey Seeker is Blonde American Style Barleywine brewed with Honey.

Hotel Life
American Lager
4.7% ABV.

Hotel Life is very mild on the hop and malt character. A straw to gold, very clean and crisp, highly carbonated lager.

Imperial Prairie Madness
Imperial Red Ale
8.6% ABV.

We took our Prairie Madness recipe, and scaled up both the hops and the alcohol, and added some new hops to the mix. Brewed with Citra, Simcoe, Mosaic, and Columbus, this big red ale is quite hoppy, with a big malt punch to back it up.

Prickly Punch
Double Dry Hopped Northeast Double I.P.A.
8.9% ABV.

This is a collaboration brew with our friends from Burn'em Brewing. We did a Double Dry Hopped Northeast Double I.P.A. with Vic Secret, Mosaic & Amarillo Hopps. Then we add Prickley Pear to make this beer even juicier!

Guava Gose
Gose w/Guava & Sea Salt
4% ABV

This refreshing German-Style Sour Wheat Ale was brewed with a guava and sea salt. Then the beer is soured with Lactobacillus after the beer was fermented. Low alcohol content with the salinity and acidity of this beer makes it a nice summer session ale.

Welcome Aboard
Shandy
5.7% ABV.

Welcome Aboard is a great summer beer. We took our Strong American Lager, #Sorry For Partying and infused it with some lemonade and made it into a shandy.

Brandon

Brandon Banbury

Brandon came from a background as an accomplished home brewer who has specialized in beligian, sours, and barrel aged beer. Brewing at his home in the south suburbs, his beers have gained regional recognition and won many national awards. Brandon also brings 8 years experience in food and beverage plant systems and civil engineering. Professionally with Hailstorm Brandon has won a gold, silver and bronze medal in the indiana beer cup, as well as a silver medal at the 2015 Great American Beer Festival. He is a BJCP recognized beer judge and frequently judges in both professional and home brewing competitions.

Chris

Chris Schiller

Chris was a homebrewer for over 5 years and had wanted to scale up to commercial brewing since the start. Specializing in porters, stouts, belgian trippels, and bavarian wheats, he rounds out some of the offerings at Hailstorm. He designs the labels, and coming from a career in consulting and software engineering, Chris supports the accounting/finance/IT operations of the busines.

Gene Wabiszczewicz

Gene brings a wealth of construction and operations experience to our team. He helped design our taproom and brewery layout and function. He maintains our taproom and brewery as well as organizing and coordinating special events.

Josh

Josh Wabiszczewicz

Josh has years of experience in the hospitality industry and brings his excellent people skills and professionalism to our tap room and keeps everything running smoothly. He manages all of our special and weekly events, and our wonderful team of taproom experts.
